Description

Pasta:

  • 12 ounces elbow macaroni or rotini pasta

Dressing:

  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Veggies:

  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped red onion
  • 1/4 cup chopped dill pickles or relish
  • 1/4 cup shredded carrot
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the Pasta: Cook pasta according to package instructions until al dente. Drain and rinse under cold water, then set aside.
  2. Make the Dressing: In a large bowl, whisk together mayonnaise, sour cream, vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
  3. Combine Ingredients: Add the cooled pasta, celery, bell pepper, red onion, pickles, carrot, and parsley. Toss gently until coated.
  4. Chill and Serve: Cover and refrigerate for at least 1 hour. Stir before serving and adjust seasoning if needed.
