Pasta:
- 12 ounces elbow macaroni or rotini pasta
Dressing:
- 1 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Veggies:
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/4 cup chopped red onion
- 1/4 cup chopped dill pickles or relish
- 1/4 cup shredded carrot
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the Pasta: Cook pasta according to package instructions until al dente. Drain and rinse under cold water, then set aside.
- Make the Dressing: In a large bowl, whisk together mayonnaise, sour cream, vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
- Combine Ingredients: Add the cooled pasta, celery, bell pepper, red onion, pickles, carrot, and parsley. Toss gently until coated.
- Chill and Serve: Cover and refrigerate for at least 1 hour. Stir before serving and adjust seasoning if needed.
