For the chicken:
- 4 boneless, skinless chicken thighs or breasts
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the peri-peri cream sauce:
- 1 tablespoon butter
- 2 cloves garlic (minced)
- 1/2 cup peri-peri sauce
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1 tablespoon lemon juice
- Salt and pepper to taste
For serving:
- 2 cups cooked rice
- Fresh chopped parsley (for garnish)
Instructions
- Marinate the chicken: In a bowl, coat the chicken with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Let marinate for 15–30 minutes (or overnight for more flavor).
- Cook the chicken: Heat a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side, or until golden brown and fully cooked through. Remove and set aside.
- Make the peri-peri cream sauce: In the same skillet, reduce heat to medium and add butter. Sauté the garlic for 30 seconds until fragrant. Stir in the peri-peri sauce, heavy cream, chicken broth, and lemon juice. Simmer for 2–3 minutes until slightly thickened. Season to taste with salt and pepper.
- Combine and serve: Return the cooked chicken to the skillet and spoon sauce over the top. Simmer for another 2–3 minutes until warmed through and coated in sauce. Serve hot over a bed of cooked rice and garnish with fresh parsley.

- Use mild, medium, or hot peri-peri sauce depending on your spice preference.
- For a dairy-free version, substitute coconut milk for heavy cream.
