For the peri-peri cream sauce:

  • 1 tablespoon butter
  • 2 cloves garlic (minced)
  • 1/2 cup peri-peri sauce
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

For serving:

  • 2 cups cooked rice
  • Fresh chopped parsley (for garnish)

Instructions

  1. Marinate the chicken: In a bowl, coat the chicken with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Let marinate for 15–30 minutes (or overnight for more flavor).
  2. Cook the chicken: Heat a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side, or until golden brown and fully cooked through. Remove and set aside.
  3. Make the peri-peri cream sauce: In the same skillet, reduce heat to medium and add butter. Sauté the garlic for 30 seconds until fragrant. Stir in the peri-peri sauce, heavy cream, chicken broth, and lemon juice. Simmer for 2–3 minutes until slightly thickened. Season to taste with salt and pepper.
  4. Combine and serve: Return the cooked chicken to the skillet and spoon sauce over the top. Simmer for another 2–3 minutes until warmed through and coated in sauce. Serve hot over a bed of cooked rice and garnish with fresh parsley.
