- 2 garlic cloves, minced
- 1 can (28 oz) whole peeled tomatoes
- 1 cup vegetable broth or chicken broth
- 1/2 cup heavy cream or full-fat coconut milk
- 1 tbsp tomato paste
- 1 tsp sugar (optional)
- 1/2 tsp dried basil
- Salt and black pepper to taste
For Garnish:

Instructions
- Sauté Aromatics: In a large saucepan, heat olive oil. Sauté onion until soft, then add garlic and cook.
- Cook Soup: Add tomatoes, broth, tomato paste, basil, and sugar. Simmer covered for 15-20 minutes.
- Blend: Use immersion blender or traditional blender to puree the soup until smooth.
- Finish: Return to heat, stir in cream, season with salt and pepper. Heat through and serve garnished.
