 - 1 pound salmon fillet (or 4 individual fillets), skin on or off
 - 1 tablespoon butter
 
Sauce and Vegetables
- 1 small onion, finely chopped
 - 3 cloves garlic, minced
 - ½ cup sun-dried tomatoes, drained and chopped
 - 1 teaspoon Italian seasoning, plus more to taste
 - 1 cup heavy cream
 - ¼ cup chicken broth (or dry white wine)
 - ½ cup grated Parmesan cheese
 - 1-2 cups baby spinach
 - Fresh parsley or basil, for garnish (optional)
 
Instructions
- Sear Salmon: Heat olive oil in a large skillet over medium-high heat. Season the salmon fillets generously with salt and freshly ground black pepper. Place the salmon skin-side down if skin is on, and cook until the skin is golden brown and crisp. Flip the salmon and sear the other side briefly until the salmon is nearly cooked through. Remove the salmon from the skillet and set aside.
 - Sauté Aromatics and Vegetables: In the same skillet, melt the butter. Add the finely chopped onion and sauté until it becomes translucent and soft. Then add the minced garlic and cook for about 1 minute until fragrant. Stir in the chopped sun-dried tomatoes and Italian seasoning, letting the flavors combine.
 - Make Creamy Sauce: Gradually whisk in the chicken broth or dry white wine to deglaze the pan. Follow by adding the heavy cream and grated Parmesan cheese while continuously whisking. Bring the mixture to a gentle simmer and cook until the sauce thickens to a creamy consistency. Season with salt and pepper to taste.
