Description

Instructions

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C) and generously grease a 12-cup muffin tin with butter or cooking spray to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, combine the cooled mashed potatoes, eggs, milk, shredded cheddar cheese, and thawed corn. Stir until the mixture is well combined and uniform.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, garlic powder, paprika, salt, and black pepper to distribute the spices evenly.
  4. Incorporate Dry into Wet: Gradually add the dry ingredients into the potato mixture, stirring until just combined to avoid overmixing which can toughen the muffins.
  5. Add Optional Herbs: Fold in the chopped chives or green onions if using, to add a fresh, mild onion flavor.
  6. Fill Muffin Tin: Spoon the batter evenly into the greased muffin tin cups, filling each almost to the top for nicely rounded muffins.
