- 1 tablespoon onion powder
- 1/2 teaspoon smoked paprika
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup additional breadcrumbs for coating
- 2 tablespoons olive oil (for pan frying)
- BBQ sauce for serving
Instructions
- Prepare the Chickpea Mixture: In a food processor, combine chickpeas, oats, breadcrumbs, grated carrot, garlic, onion powder, smoked paprika, soy sauce, olive oil, salt, and pepper. Pulse until well combined.
- Form the Nuggets: Scoop 1 tablespoon of the mixture, shape into nuggets, and coat with additional breadcrumbs.
- Chill and Fry: Chill nuggets for 15–20 minutes. Pan fry in olive oil until golden and crispy.
- Serve: Drain on paper towels and serve warm with BBQ sauce.
Notes
- For a lower-fat option, bake at 400°F (200°C) for 20–25 minutes or air-fry.
- Add cayenne or chili flakes for a spicy variation.
