  • 1/2 teaspoon smoked paprika
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil

  • 1/2 cup additional breadcrumbs for coating
  • 2 tablespoons olive oil (for pan frying)
  • BBQ sauce for serving

Instructions

  1. Prepare the Chickpea Mixture: In a food processor, combine chickpeas, oats, breadcrumbs, grated carrot, garlic, onion powder, smoked paprika, soy sauce, olive oil, salt, and pepper. Pulse until well combined.
  2. Form the Nuggets: Scoop 1 tablespoon of the mixture, shape into nuggets, and coat with additional breadcrumbs.
  3. Chill and Fry: Chill nuggets for 15–20 minutes. Pan fry in olive oil until golden and crispy.
  4. Serve: Drain on paper towels and serve warm with BBQ sauce.
