Tortillas & Cheese
- 10 corn tortillas

- 1 tablespoon olive oil

Instructions
- Cook the Beef: Heat a skillet over medium-high heat and add the ground beef. Cook, breaking it apart, until browned. Drain excess fat if needed. Stir in the taco seasoning and red enchilada sauce. Simmer the mixture for 5 minutes, then remove from heat.
- Prepare the Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 30-60 seconds until they are pliable. Lightly brush one side of each tortilla with olive oil to prepare them for baking.
- Assemble the Tacos: Preheat the oven to 450°F (232°C). Place the tortillas oiled side down on a nonstick or ceramic baking sheet. Sprinkle cheese on half of each tortilla, then spoon the beef mixture on top. Fold each tortilla in half gently pressing down to hold the fillings inside.
- Bake the Tacos: Bake the assembled tacos in the preheated oven for 16 minutes, flipping them halfway through, until they are golden brown and crispy.
