Description

These Crispy Ground Beef Tacos are a flavorful and easy-to-make meal featuring seasoned ground beef, melty cheese, and crispy corn tortillas baked to perfection. Served with classic toppings like guacamole, pico de gallo, salsa, and sour cream, this recipe is perfect for a quick weeknight dinner that satisfies everyone at the table.

Ingredients

Scale

Beef Mixture

  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • ½ cup red enchilada sauce

Tortillas & Cheese

  • 10 corn tortillas
  • 1 cup shredded Oaxaca cheese (or Monterey Jack, Cheddar, or Mexican blend)
  • 1 tablespoon olive oil

Toppings (Optional)

  • Guacamole
  • Pico de gallo
  • Salsa
  • Sour cream

Instructions

  1. Cook the Beef: Heat a skillet over medium-high heat and add the ground beef. Cook, breaking it apart, until browned. Drain excess fat if needed. Stir in the taco seasoning and red enchilada sauce. Simmer the mixture for 5 minutes, then remove from heat.
  2. Prepare the Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for 30-60 seconds until they are pliable. Lightly brush one side of each tortilla with olive oil to prepare them for baking.
  3. Assemble the Tacos: Preheat the oven to 450°F (232°C). Place the tortillas oiled side down on a nonstick or ceramic baking sheet. Sprinkle cheese on half of each tortilla, then spoon the beef mixture on top. Fold each tortilla in half gently pressing down to hold the fillings inside.
  4. Bake the Tacos: Bake the assembled tacos in the preheated oven for 16 minutes, flipping them halfway through, until they are golden brown and crispy.
  5. Serve & Enjoy: Remove the tacos from the oven and let them cool slightly. Serve with your favorite toppings such as guacamole, pico de gallo, salsa, and sour cream for a delicious and satisfying meal.

Notes

  • Use lean ground beef to reduce excess fat and calories.
  • Microwaving the tortillas before baking makes them more pliable and easier to fold without cracking.
  • For extra crispiness, flip the tacos halfway through baking to ensure both sides brown evenly.
  • Feel free to substitute corn tortillas with flour tortillas if preferred.
  • Adjust toppings to taste or omit to keep the tacos simple.
