Salmon Tenders:

- 1 cup buttermilk

Breading:
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 2 eggs (beaten)
Other:
- Vegetable oil for frying
- ¼ cup honey
- 1–2 teaspoons hot sauce (to taste)
- ½ teaspoon red pepper flakes (optional)
Instructions
- Marinate the Salmon: In a bowl, combine buttermilk, garlic powder, smoked paprika, salt, and pepper. Add salmon strips and marinate for at least 20 minutes.
- Prepare the Breading: In separate shallow bowls, place flour, beaten eggs, and a mixture of panko breadcrumbs with a pinch of salt and pepper.
- Coat the Salmon: Remove salmon from marinade, allowing excess to drip off. Dredge each piece in flour, dip in egg, then coat with panko.
- Fry the Salmon: Heat 1 inch of vegetable oil in a skillet over medium-high heat. Fry salmon tenders in batches for 2–3 minutes per side until golden brown and crispy. Drain on paper towels.
- Prepare the Hot Honey: In a small saucepan, warm honey with hot sauce and red pepper flakes until just simmering. Drizzle hot honey over salmon tenders or serve on the side for dipping.

- For an oven-baked version, bake at 425°F for 15–18 minutes or air fry at 400°F for 10–12 minutes.
