Sweet Potato Stacks:

  • 2 large sweet potatoes, peeled and thinly sliced
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F and lightly grease a muffin tin.
  2. Prepare the Sweet Potatoes: In a large bowl, toss sweet potato slices with melted butter, olive oil, garlic powder, thyme, salt, and pepper until evenly coated.
  3. Layer the Stacks: Layer 5–6 slices in each muffin cup, slightly overlapping. Sprinkle each stack with a bit of Parmesan cheese, reserving some for topping.
  4. Bake: Bake for 30–35 minutes until tender and edges are crispy. In the last 5 minutes, sprinkle remaining Parmesan over the tops and return to oven until golden and bubbly.
  5. Serve: Let cool for 5 minutes before carefully removing from the tin. Garnish with extra thyme and serve warm.
