Sweet Potato Stacks:
- 2 large sweet potatoes, peeled and thinly sliced
- 3 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon fresh thyme leaves, plus more for garnish
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ½ cup freshly grated Parmesan cheese
Instructions
- Preheat the Oven: Preheat the oven to 400°F and lightly grease a muffin tin.
- Prepare the Sweet Potatoes: In a large bowl, toss sweet potato slices with melted butter, olive oil, garlic powder, thyme, salt, and pepper until evenly coated.
- Layer the Stacks: Layer 5–6 slices in each muffin cup, slightly overlapping. Sprinkle each stack with a bit of Parmesan cheese, reserving some for topping.
- Bake: Bake for 30–35 minutes until tender and edges are crispy. In the last 5 minutes, sprinkle remaining Parmesan over the tops and return to oven until golden and bubbly.
- Serve: Let cool for 5 minutes before carefully removing from the tin. Garnish with extra thyme and serve warm.
