Instructions

  1. Prepare the Chicken and Vegetables: Place the chicken breasts in the bottom of the crock pot. Sprinkle Cajun seasoning, paprika, garlic powder, onion powder, salt, and black pepper evenly over the chicken. Layer the sliced red and green bell peppers and onion on top of the seasoned chicken.
  2. Add Broth and Cook: Pour in the low-sodium chicken broth over the ingredients. Cover the crock pot and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the chicken is fully cooked and tender.
  3. Shred the Chicken: Remove the chicken breasts from the crock pot and shred or slice them using two forks. Set aside temporarily.
  4. Create the Creamy Sauce: Stir the cubed cream cheese and heavy cream into the crock pot liquid until smooth and well combined. This will create a rich, creamy sauce.
