Instructions

  2. Combine Liquids: In a large bowl, whisk together the chicken broth, nutmeg, kosher salt, black pepper, and cornstarch until the mixture is smooth and free of lumps. Pour this liquid mixture over the vegetables in the crockpot and stir gently to combine everything evenly.
  3. Cook: Cover the crockpot and cook on HIGH for 2-3 hours or on LOW for 6-7 hours, until the broccoli is tender. To achieve a smoother texture, use an immersion blender to blend the soup carefully, leaving some chunks if you prefer a bit of texture.
  4. Add Milk and Cheese: Reduce the heat setting on the crockpot to LOW. Add the milk and shredded cheddar cheese to the soup, stirring well. Continue cooking for an additional 30 minutes or until the cheese has fully melted and the soup is heated through.
