Noodles:

  • 8 ounces Chinese wheat noodles or spaghetti

Pork Mixture:

  • 1/2 pound ground pork
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced

  • 2 green onions, chopped
  • 1/4 teaspoon Sichuan peppercorns, crushed
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1/2 teaspoon sugar

Sauce:

  • 3 tablespoons sesame paste or tahini
  • 2 tablespoons soy sauce
  • 1 tablespoon Chinese black vinegar or rice vinegar
  • 2 teaspoons chili oil or more to taste
  • 1 teaspoon sesame oil
  • 1/2 cup chicken broth or water

Toppings:

  • Blanched bok choy or spinach
  • Extra chopped green onions
  • Crushed peanuts or sesame seeds (optional)

Instructions

  1. Cook the noodles: Cook the noodles according to package instructions, drain, and set aside.
  2. Prepare the sauce: In a small bowl, whisk together all the sauce ingredients until smooth. Adjust consistency with more broth if needed.
  3. Cook the pork mixture: Sauté garlic, ginger, green onions, and Sichuan peppercorns in a skillet. Add ground pork and cook until browned. Stir in soy sauce, Shaoxing wine, and sugar. Cook until caramelized.
  4. Assemble: Divide sauce between serving bowls. Add noodles and toss well. Top with pork mixture, greens, and optional toppings. Serve hot.

Notes

  • Adjust spice level with more or less chili oil.
  • For a vegetarian version, substitute mushrooms or crumbled tofu for pork.
