Scale
Dry Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
Wet Ingredients
- 1 cup buttermilk
- 2 large eggs
- 1/3 cup unsalted butter, melted
- 3 tbsp honey
Glaze
- 1/4 cup unsalted butter, melted
- 2 tbsp honey
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and grease a mini muffin tin to ensure the cornbread poppers don’t stick.
- Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- Combine Wet Ingredients: In a separate bowl, blend the buttermilk, eggs, melted butter, and honey until the mixture is smooth and evenly mixed.
- Make the Batter: Pour the wet ingredient mixture into the bowl with the dry ingredients and gently mix until just combined, being careful not to overmix to keep the texture light and tender.
- Spoon Batter into Tin: Fill each cup of the prepared mini muffin tin about three-quarters full with the batter.
- Bake: Place the tin in the preheated oven and bake for 12 to 15 minutes, or until the poppers are golden brown and a toothpick inserted into the center comes out clean.
- Prepare Glaze: While the poppers bake, whisk together the melted butter and honey in a small bowl to create the glaze.
- Glaze the Poppers: Remove the poppers from the oven and while they are still warm, brush the tops generously with the honey butter glaze for a shiny, sweet finish.
- Serve: Serve the honey butter cornbread poppers warm as a delicious side dish, appetizer, or snack.
Notes
- Do not overmix the batter to avoid tough cornbread poppers.
- If you don’t have buttermilk, you can substitute by adding 1 tablespoon of white vinegar or lemon juice to 1 cup of milk and letting it sit for 5 minutes.
- Use a pastry brush to apply the honey butter glaze evenly.
- These poppers are best enjoyed fresh but can be reheated gently in the oven or microwave.
- For a spicy twist, add a pinch of cayenne pepper or chopped jalapeños to the batter.
