Chickpeas:
- 1 can (15 oz) chickpeas, drained, rinsed, and patted dry
- 1 tablespoon olive oil
- 1 tablespoon dill pickle juice
Seasonings:
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried dill
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Dry the chickpeas: Spread the chickpeas on a clean towel and pat them very dry, removing any loose skins.
- Coat with seasonings: In a bowl, toss the chickpeas with olive oil and dill pickle juice until coated. Sprinkle with garlic powder, onion powder, dried dill, salt, and pepper, and toss again.
- Roast: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Roast for 30–35 minutes, stirring once or twice, until golden brown and crispy.
- Cool and serve: Let cool slightly before serving.
Notes
- For extra crunch, leave the chickpeas in the oven (turned off) for an additional 10 minutes after baking.
- Store leftovers in an airtight container at room temperature for up to 3 days.
