Chickpeas:

  • 1 can (15 oz) chickpeas, drained, rinsed, and patted dry
  • 1 tablespoon olive oil
  • 1 tablespoon dill pickle juice

Seasonings:

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried dill
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Dry the chickpeas: Spread the chickpeas on a clean towel and pat them very dry, removing any loose skins.
  3. Coat with seasonings: In a bowl, toss the chickpeas with olive oil and dill pickle juice until coated. Sprinkle with garlic powder, onion powder, dried dill, salt, and pepper, and toss again.
  4. Roast: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Roast for 30–35 minutes, stirring once or twice, until golden brown and crispy.
  5. Cool and serve: Let cool slightly before serving.

Notes

  • For extra crunch, leave the chickpeas in the oven (turned off) for an additional 10 minutes after baking.
