Cake:
- 1/2 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sour cream
- 2 cups fresh or canned sliced peaches (drained if canned)
Topping:
- 1 tablespoon granulated sugar
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9-inch round or square baking pan.
- Cream butter and sugar: In a large bowl, cream the butter and brown sugar until light and fluffy.
- Add eggs and vanilla: Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with sour cream, beginning and ending with the dry ingredients. Mix until just combined.
- Add peaches: Gently fold in the peach slices.
- Prepare topping: In a small bowl, mix the granulated sugar and cinnamon, then sprinkle over the top of the cake.
- Bake: Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.
- Cool and serve: Cool in the pan for 10 minutes before transferring to a wire rack to cool completely or serve slightly warm.

- You can substitute sour cream with plain Greek yogurt.
