Description

These Easy Buffalo Cauliflower Bites are a vegetarian twist on classic buffalo wings. Crispy on the outside, tender on the inside, and coated in a spicy buffalo sauce, they make a perfect appetizer or snack for game day or any gathering.

  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika

For the Batter

  • 1 cup milk (or unsweetened plant-based milk)

For the Buffalo Sauce

  • 3/4 cup buffalo sauce
  • 2 tablespoons unsalted butter, melted (or vegan butter)

Instructions

  1. Preheat the Oven: Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Prepare the Batter: In a large bowl, whisk together flour, garlic powder, onion powder, smoked paprika, and salt. Add milk and whisk until smooth.
  3. Coat Cauliflower: Toss cauliflower florets in the batter until fully coated, then arrange them on the baking sheet.
  4. Bake Cauliflower: Bake for 20 minutes, flipping halfway through, until lightly golden.
  5. Make Buffalo Sauce: In a small bowl, stir together buffalo sauce and melted butter.
  6. Coat Cauliflower Again: Remove cauliflower from the oven and brush or toss with the buffalo sauce mixture.
  7. Final Bake: Return to the oven for 10 minutes until the edges are slightly crisp.
  8. Serve: Serve immediately with ranch or blue cheese dressing and celery sticks if desired.

Notes

  • For extra crispiness, broil the cauliflower for 2–3 minutes after the final bake.
  • This recipe can also be made in an air fryer—cook at 400°F (200°C) for about 15 minutes, tossing halfway through.
