- 1 medium head cauliflower, cut into bite-sized florets
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
For the Batter
- 1 cup milk (or unsweetened plant-based milk)
For the Buffalo Sauce
- 3/4 cup buffalo sauce
- 2 tablespoons unsalted butter, melted (or vegan butter)
Instructions
- Preheat the Oven: Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Prepare the Batter: In a large bowl, whisk together flour, garlic powder, onion powder, smoked paprika, and salt. Add milk and whisk until smooth.
- Coat Cauliflower: Toss cauliflower florets in the batter until fully coated, then arrange them on the baking sheet.
- Bake Cauliflower: Bake for 20 minutes, flipping halfway through, until lightly golden.
- Make Buffalo Sauce: In a small bowl, stir together buffalo sauce and melted butter.
- Coat Cauliflower Again: Remove cauliflower from the oven and brush or toss with the buffalo sauce mixture.
- Final Bake: Return to the oven for 10 minutes until the edges are slightly crisp.
- Serve: Serve immediately with ranch or blue cheese dressing and celery sticks if desired.
Notes
- For extra crispiness, broil the cauliflower for 2–3 minutes after the final bake.
- This recipe can also be made in an air fryer—cook at 400°F (200°C) for about 15 minutes, tossing halfway through.
