- 3 tablespoons unsalted butter, divided
- 2 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 3/4 cup low-sodium chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers, rinsed and drained
- 2 tablespoons fresh parsley, chopped
- Lemon slices for garnish (optional)
Instructions
- Prepare the Chicken: Pound chicken breast halves to 1/2-inch thickness. Combine flour, salt, and pepper in a dish. Dredge chicken in flour mixture.
- Cook the Chicken: Heat oil and 1 tablespoon butter in a skillet. Cook chicken until golden brown. Set aside.
- Make the Sauce: Cook garlic, deglaze with wine or broth. Add remaining broth, lemon juice, capers. Simmer and stir in 2 tablespoons butter.
- Finish and Serve: Return chicken to the pan, coat with sauce. Garnish with parsley and lemon slices. Serve hot.
