Wet Ingredients:
- 2 large eggs
- 1/4 cup milk
Additional Ingredients:
- 2 cups corn kernels (fresh, canned, or thawed from frozen)
- 1/4 cup chopped green onions
- 1/4 cup shredded cheddar cheese (optional)
- 2 tablespoons chopped fresh parsley
- Vegetable oil for frying
Instructions
- Dry Ingredients: In a large bowl, whisk together flour, baking powder, salt, pepper, and smoked paprika.
- Wet Ingredients: In a separate bowl, beat eggs and milk until combined. Pour wet ingredients into dry ingredients and stir just until blended.
- Final Mix: Fold in corn, green onions, cheese if using, and parsley.
- Frying: Heat oil in a skillet, drop batter into the skillet, flatten slightly, and cook until golden brown and cooked through.
- Serve: Drain on paper towels and serve hot with sour cream or dipping sauce.
Notes
- For extra flavor, add a pinch of cayenne pepper or use pepper jack cheese.
- Keep fritters warm in a 200°F (95°C) oven while frying remaining batches.
- To make them lighter, pan-fry with minimal oil or air fry at 375°F (190°C) for 8–10 minutes, flipping halfway.
