- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (8 oz) package cream cheese, cubed
- 1 cup sour cream
- 2 cups low-sodium chicken broth
- Salt and pepper to taste
For Garnish:
- Chopped cilantro
- Shredded cheese (optional)
Instructions
- Heat the olive oil: In a large pot, heat olive oil over medium heat.
- Cook the meat: Add ground beef or turkey, cook until browned.
- Add aromatics: Add onion and garlic, sauté until softened.
- Season the soup: Stir in taco seasoning, Rotel, black beans, and corn.
- Add broth: Pour in chicken broth and bring to a simmer.
