- 1 can (14 oz) diced tomatoes with juice
- 2 tbsp taco seasoning
Instructions
- Brown the Ground Beef: In a large pot set over medium heat, add the lean ground beef and cook for 5-7 minutes until browned. Stir occasionally to break up the meat. Once cooked, drain excess grease from the pot to reduce fat in the soup.
- Sauté Onions and Bell Pepper: Add the chopped onion and bell pepper to the pot with the beef. Cook and stir for about 3-5 minutes until the vegetables are softened and fragrant, enhancing flavor and texture.
- Add Remaining Ingredients: Stir in the rinsed black beans, corn, diced tomatoes with juice, and the taco seasoning. Mix thoroughly to combine all ingredients well.
- Simmer the Soup: Reduce the heat to low and allow the soup to simmer uncovered for 15 minutes. This allows flavors to meld and the soup to thicken slightly.
