Ingredients
Scale
Bean Sauce
- 2 cups cooked black beans or 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup vegetable broth or water
- 2 tablespoons olive oil
- 1/4 onion, chopped
- 1 garlic clove, minced
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder (optional)
- Salt to taste
Tortillas and Toppings
- 8 corn tortillas
- Oil for softening tortillas
- 1/2 cup crumbled queso fresco or feta
- 1/4 cup chopped cilantro
- 1/4 cup diced white onion
- 1/4 cup crema or sour cream (optional)
Instructions
- Prepare the Bean Sauce: In a skillet over medium heat, warm the olive oil and sauté the chopped onion and minced garlic until they become soft and fragrant, about 3 to 4 minutes. Add the black beans, vegetable broth, ground cumin, chili powder if using, and a pinch of salt. Allow the mixture to simmer for 5 minutes to develop the flavors. Then, blend the mixture until it reaches a smooth and creamy consistency. Taste and adjust the seasoning if necessary, and keep the sauce warm.
- Soften the Tortillas: In a separate pan, heat a little oil over medium heat. Briefly warm each tortilla for about 10 to 15 seconds on each side to soften them and make them pliable. This step helps prevent the tortillas from cracking when dipped and folded.
- Assemble the Enfrijoladas: Dip each softened tortilla into the warm bean sauce, coating both sides evenly. Fold each tortilla into halves or roll them like enchiladas and place them on a serving plate.
- Add Toppings and Serve: Top the assembled enfrijoladas with crumbled queso fresco, diced white onion, chopped cilantro, and a drizzle of crema or sour cream if desired. Serve immediately to enjoy the dish at its best.
Notes
- Use pinto beans instead of black beans for a milder flavor.
- For a heartier meal, fill the tortillas with shredded chicken, scrambled eggs, or sautéed vegetables before folding.
- If desired, add a sprinkle of chili powder or hot sauce on top for extra heat.
