Fresh Peach Filling:
- 6 fresh peaches (peeled, pitted, and sliced – about 5 cups)
- 3/4 cup granulated sugar (divided)
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
For the Topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons cold unsalted butter (cut into cubes)
- 1/4 cup boiling water
Optional:
- Coarse sugar for topping
- Vanilla ice cream for serving
Instructions
- Preheat oven to 375°F. Lightly grease a 9×9-inch or similar-sized baking dish.
- Filling: In a large mixing bowl, toss sliced peaches with 1/2 cup granulated sugar, brown sugar, cinnamon, lemon juice, vanilla, and cornstarch. Pour into the prepared baking dish.
- Topping: In a separate bowl, whisk together flour, remaining 1/4 cup granulated sugar, brown sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in boiling water until a thick dough forms.
- Assembly: Drop spoonfuls of the dough over the peaches, leaving gaps. Sprinkle with coarse sugar if desired.
- Bake: Bake for 35–40 minutes until golden and bubbly. Cool slightly before serving. Enjoy warm with a scoop of ice cream.
Notes
- No need to peel peaches for a more rustic texture.
- Frozen or canned peaches can be used when fresh are not available.
