- Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press firmly into the bottom and sides of a 9-inch pie dish to form a crust. Freeze for 15 minutes while preparing the filling.
- Make the Filling: In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until well combined. Fold in the chopped strawberries. Gently fold in the whipped topping until fully incorporated.
- Assemble and Freeze: Pour the filling into the chilled crust and smooth the top. Freeze the pie for at least 4 hours, or until firm.
- Serve and Garnish: Before serving, let the pie sit at room temperature for 10–15 minutes to soften slightly. Garnish with additional whipped topping and fresh strawberries if desired.
