Cookie Dough:

- 3/4 cup granulated sugar

- 1 1/2 cups gluten-free all-purpose flour blend (with xanthan gum)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt

Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream Butter, Cream Cheese, and Sugar: In a large bowl, cream together butter, cream cheese, and sugar until smooth and fluffy. Beat in the egg, vanilla, and almond extract (if using) until fully incorporated.
- Combine Dry Ingredients: In a separate bowl, whisk together the gluten-free flour blend, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
- Shape and Bake: Scoop tablespoon-sized portions and roll into balls. Optionally, roll each ball in granulated sugar for a sweet coating. Place on the baking sheet, leaving space between cookies. Gently press down to slightly flatten. Bake for 10–12 minutes, or until the edges are set and bottoms are lightly golden.
- Cool and Serve: Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
