Ingredients
Scale
Potatoes
- 2 pounds baby potatoes or Yukon golds (halved or quartered)
Marinade
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 3 cloves garlic (minced)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Toppings
- 1/2 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- Optional: lemon wedges for serving
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot and ready for roasting the potatoes to a crispy finish.
- Toss Potatoes: In a large mixing bowl, combine the halved or quartered potatoes with olive oil, lemon juice, red wine vinegar, dried oregano, minced garlic, salt, and black pepper. Toss everything thoroughly so the potatoes are evenly coated in the flavorful marinade.
- Arrange for Roasting: Spread the coated potatoes out in a single layer on a parchment-lined baking sheet. This helps them roast evenly and develop a nice crispy texture.
- Roast Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 35–40 minutes. Halfway through cooking, turn the potatoes to ensure they brown evenly on all sides.
- Add Feta and Parsley: Once the potatoes are golden brown and crispy on the edges, remove them from the oven. Immediately sprinkle the hot potatoes with crumbled feta cheese and freshly chopped parsley so the cheese softens slightly but maintains its shape.
- Serve: Serve the roasted potatoes warm. Garnish with optional lemon wedges for an extra burst of fresh citrus flavor if desired.
Notes
- For extra crispiness, soak the potato pieces in cold water for 30 minutes before roasting, then drain and pat dry thoroughly.
- These roast potatoes pair beautifully with grilled meats, falafel, or as part of a Mediterranean mezze platter.
