Main Ingredients:
- 12 oz rotini or penne pasta
- 1 1/2 cups cherry tomatoes (halved)
- 1 cup cucumber (diced)
- 3/4 cup red bell pepper (chopped)
- 1/2 cup red onion (thinly sliced)
- 3/4 cup kalamata olives (halved)
- 3/4 cup feta cheese (crumbled)
- 1/4 cup fresh parsley (chopped)
For the dressing:
- 1/3 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic (minced)
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the Pasta: Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
- Make the Dressing: Whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper.
- Combine Ingredients: In a large bowl, mix pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, feta, and parsley.
- Add Dressing: Pour the dressing over the salad and toss to coat everything.
- Chill and Serve: Refrigerate for at least 30 minutes before serving.

- This salad can be made a day ahead.
