Instructions
- Prepare Vegetables: Chop the carrots, potatoes, and onion into even chunks to ensure uniform cooking throughout the stew.
- Brown the Lamb: Heat olive oil in a large pot over medium heat. Add lamb chunks and brown on all sides to develop flavor and seal in juices.
- Sauté Aromatics: Remove the browned lamb and sauté chopped onions and minced garlic in the same pot until they become translucent and fragrant.
- Cook Vegetables: Add the chopped carrots, potatoes, thyme sprigs, and bay leaves to the pot. Stir continuously for 3-4 minutes until the vegetables begin to glisten with oil.
- Simmer the Stew: Return the lamb to the pot, pour in the beef broth, and add pearl barley if using. Bring the mixture to a gentle simmer.
- Slow Cook: Partially cover the pot and reduce heat to low. Let the stew cook for 1.5 hours or until the lamb is fork-tender and the flavors have melded beautifully.

- For a thicker stew, mash some of the potatoes after cooking or add a slurry of flour and water towards the end of cooking.
