Scale

For the cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/2 cups mashed ripe bananas (about 3 bananas)
  • 1/2 cup chopped walnuts

For the frosting:

  • 1 (8-ounce) block cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream or milk

For garnish:

  • 1/2 cup chopped toasted walnuts
  • banana slices (optional, for serving)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. Make the cake batter: In a large bowl, cream the butter and sugar. Add eggs and vanilla, then mix in the sour cream and mashed bananas. Gradually add dry ingredients, fold in walnuts.
  4. Bake the cakes: Divide batter between pans and bake for 25–30 minutes. Cool on wire racks.
  5. Prepare the frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar, then beat in vanilla and cream until fluffy.
  6. Assemble the cake: Frost the cooled cakes, stack, and garnish with walnuts and banana slices.
