Description

Crispy homemade potato chips paired with a rich and creamy Gorgonzola cheese sauce, perfect for an indulgent snack or appetizer.

Ingredients

Scale

Potato Chips:

  • 2 large russet potatoes, thinly sliced
  • Vegetable oil for frying
  • Salt to taste

Gorgonzola Cheese Sauce:

  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup crumbled Gorgonzola cheese
  • Salt and black pepper to taste

Instructions

  1. Slice Potatoes: Use a mandoline or sharp knife to thinly slice the potatoes. Soak the slices in cold water for 30 minutes to remove excess starch, then drain and pat dry thoroughly using paper towels.
  2. Heat Oil: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C) to prepare for frying the chips.
  3. Fry Potato Slices: Fry the potato slices in batches for 2–3 minutes each, ensuring not to overcrowd the pan. Cook until the chips are golden and crispy.
  4. Drain and Season: Using a slotted spoon, remove the chips and drain on paper towels to absorb excess oil. Immediately season with salt while still hot.
  5. Prepare Cheese Sauce Base: In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to form a roux.
  6. Add Cream: Gradually whisk in the heavy cream and continue cooking for 3–5 minutes until the sauce begins to thicken.
  7. Incorporate Cheese: Stir in the crumbled Gorgonzola cheese until fully melted and the sauce is smooth. Season with salt and black pepper to taste.
  8. Serve: Serve the warm potato chips with the Gorgonzola cheese sauce on the side or drizzled on top as a delicious dipping accompaniment.

Notes

  • Soaking the potatoes in water helps remove excess starch, resulting in crispier chips.
  • Patting the potato slices dry is crucial to avoid oil splatter during frying.
  • Fry in small batches to maintain the oil temperature and achieve even crispness.
  • The Gorgonzola cheese sauce can be adjusted with cream quantity for desired thickness.
  • Use good quality Gorgonzola for best flavor in the cheese sauce.
  • Leftover chips are best eaten fresh as they lose crispness over time.
