Description

These Hot Honey Chicken Bowls are a delicious combination of sweet, spicy, and savory flavors. Tender chicken coated in a sticky hot honey sauce served with rice, veggies, and avocado make a satisfying meal.

Ingredients

Scale

For the chicken:

  • 1 1/2 pounds boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the hot honey:

  • 1/3 cup honey
  • 12 teaspoons red pepper flakes (adjust to taste)
  • 1 teaspoon apple cider vinegar

For the bowls:

  • 2 cups cooked rice or quinoa
  • 1 1/2 cups steamed or roasted broccoli
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • Optional toppings: sliced green onions, sesame seeds, lime wedges

Instructions

  1. Prepare the hot honey: In a small saucepan, combine honey, red pepper flakes, and vinegar. Warm over low heat for 5–7 minutes without boiling. Set aside to cool.
  2. Cook the chicken: Season the chicken with paprika, garlic powder, onion powder, salt, and pepper. Cook in a skillet with olive oil until browned and cooked through.
  3. Assemble the bowls: Divide rice or quinoa among 4 bowls. Top with hot honey chicken, broccoli, carrots, and avocado slices. Drizzle with additional hot honey and add optional toppings.

Notes

  • Adjust the spice level of the hot honey by using more or fewer pepper flakes.
  • Leftovers keep well refrigerated and make great meal prep lunches.
