Instructions

  1. Preheat oven and prepare pans: Preheat oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
  3. Combine wet ingredients: In another bowl, beat eggs, oil, and vanilla until smooth. Stir in crushed pineapple, bananas, pecans, and coconut if using.
