- 8 ounces fettuccine or tagliatelle pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Boil the Pasta: Bring a large pot of salted water to a boil. Cook the noodles according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the noodles.
- Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for 1–2 minutes until fragrant, being careful not to burn the garlic.
- Toss Pasta with Sauce: Add the cooked noodles to the skillet along with the butter and a splash of reserved pasta water. Toss until the butter melts and coats the pasta evenly.
- Add Cheese and Herbs: Stir in the Parmesan cheese and parsley, adding more pasta water if needed to create a light sauce.
- Season and Serve: Season with salt and black pepper to taste. Serve warm with extra Parmesan if desired.
