Meatloaf

Korean BBQ Glaze
- 1/4 cup gochujang (Korean chili paste)
- 2 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon minced garlic
- 1 teaspoon sesame seeds (for garnish)
Instructions
- Prepare the Meat Mixture: In a large bowl, combine the ground beef, breadcrumbs, chopped onions, minced garlic, egg, milk, soy sauce, sesame oil, black pepper, and grated ginger. Mix everything thoroughly until all ingredients are well incorporated.
- Shape the Meatloaf: Transfer the meat mixture to a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
- Prepare the Korean BBQ Glaze: In a small bowl, whisk together gochujang, brown sugar, soy sauce, rice vinegar, honey, and minced garlic until smooth.
- Apply the Glaze: Spread half of the Korean BBQ glaze evenly over the top of the meatloaf before baking.
- Bake the Meatloaf: Preheat your oven to 350°F (175°C). Bake the meatloaf for about 45 minutes.
- Apply Remaining Glaze: After 45 minutes, remove the meatloaf from the oven and spread the remaining Korean BBQ glaze on top. Return it to the oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with sesame seeds before serving alongside jasmine rice and cucumber salad for a complete meal.
