  • 1 cup all-purpose flour
  • ½ cup unsalted butter (softened)
  • ¼ cup powdered sugar

For the Filling:

  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • ½ teaspoon baking powder
  • ¼ cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest

For the Topping:

  • Powdered sugar for dusting

Instructions

  1. Prepare the Crust: Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish. Combine flour, softened butter, and powdered sugar. Press into the bottom of the dish and bake for 15–18 minutes.
  2. Make the Filling: Whisk together eggs, sugar, flour, baking powder, lemon juice, and zest until smooth. Pour over hot crust.
  3. Bake: Return to the oven and bake for 20–25 minutes until set. Cool, dust with powdered sugar, and slice into bars.

Notes

  • For extra tang, add an extra teaspoon of lemon zest.
