For the Crust:
- 1 cup all-purpose flour
- ½ cup unsalted butter (softened)
- ¼ cup powdered sugar
For the Filling:
- 2 large eggs
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- ½ teaspoon baking powder
- ¼ cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
For the Topping:
- Powdered sugar for dusting
Instructions
- Prepare the Crust: Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish. Combine flour, softened butter, and powdered sugar. Press into the bottom of the dish and bake for 15–18 minutes.
- Make the Filling: Whisk together eggs, sugar, flour, baking powder, lemon juice, and zest until smooth. Pour over hot crust.
- Bake: Return to the oven and bake for 20–25 minutes until set. Cool, dust with powdered sugar, and slice into bars.
Notes
- For extra tang, add an extra teaspoon of lemon zest.
- Best served chilled and can be stored in the refrigerator for up to 4 days.
