Instructions

  1. Prepare the Fries: Wash, scrub, and pat dry the potatoes. Peel and slice into fries approximately ¾ inch wide and 3 inches long to ensure even cooking.
  2. Steam the Potatoes: Boil 1 quart of water and season it with 3 tablespoons of salt. Steam the sliced potatoes in the boiling salted water for 10–12 minutes until they are tender yet firm, which helps achieve a soft interior without falling apart.
  3. Coat and Bake: Drain the steamed potatoes and transfer them to a bowl. Drizzle with 2 tablespoons of extra virgin olive oil and toss gently to coat evenly. Arrange the fries in a single layer on a baking sheet.
  4. Bake the Fries: Bake the fries in a preheated oven at 450°F (230°C) for 10 minutes, rotate the pan to ensure even baking, then continue baking for an additional 5–10 minutes until the fries develop a golden and crispy exterior.
  5. Make the Cheese Sauce: In a saucepan over medium heat, melt 2 tablespoons of butter. Whisk in 2 tablespoons of flour to create a smooth roux. Gradually pour in ⅔ cup of milk, whisking continuously to prevent lumps. Once the mixture thickens, stir in 2 cups of shredded cheddar cheese until the sauce is creamy and well combined.
