Description

Maple and Rosemary Breakfast Sausage is a flavorful homemade sausage patty that combines the sweetness of pure maple syrup with the fragrant aroma of fresh rosemary and a blend of spices. Perfectly cooked on the stovetop, these sausages make a savory and satisfying breakfast option that can be easily prepared ahead and frozen for convenience.

Ingredients

Scale

Sausage Mixture

  • 1 pound ground pork (or a mix of pork and turkey)
  • 2 tablespoons pure maple syrup
  • 1 teaspoon chopped fresh rosemary (or 1/2 teaspoon dried)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon crushed red pepper flakes (optional)
  • 1/8 teaspoon ground nutmeg (optional)

For Cooking

  • 1 teaspoon olive oil

Instructions

  1. Combine Ingredients: In a large bowl, combine the ground pork, maple syrup, rosemary, salt, pepper, garlic powder, onion powder, and optional red pepper flakes and nutmeg. Mix gently with your hands or a spoon until just combined—avoid overworking the meat to keep the patties tender.
  2. Shape Patties: Divide the sausage mixture into 8 equal portions and shape each into small patties roughly 2 1/2 inches wide to ensure even cooking.
  3. Heat the Skillet: Heat the olive oil in a large skillet over medium heat, preparing the pan for cooking the sausage patties.
  4. Cook Patties: Add the patties to the hot skillet and cook for 4–5 minutes on each side until they develop a golden brown crust and are cooked through, reaching an internal temperature of 160°F (71°C).
  5. Rest and Serve: Transfer the cooked patties to a paper towel-lined plate to absorb excess oil and let them rest for a minute before serving, which helps the juices redistribute for maximum flavor.

Notes

  • These sausages can be cooked ahead of time and frozen completely cooled for easy meal prep.
  • You can also shape the sausage mixture into patties uncooked and freeze them to cook fresh when ready.
  • For a leaner sausage, substitute all the ground pork with ground turkey or chicken.
