Ingredients
Scale
Soup Base
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Protein
- 1 pound boneless, skinless chicken breasts or thighs
Broth and Cream
- 4 cups chicken broth
- 1 cup heavy cream
Add-ins
- 1/2 cup sun-dried tomatoes (in oil, drained and chopped)
- 1 cup small pasta (such as ditalini or orzo)
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 tablespoon chopped fresh basil (optional)
- Juice of 1/2 lemon (optional, for brightness)
Instructions
- Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Add the diced onion and cook for 4–5 minutes until softened. Stir in garlic, red pepper flakes, oregano, thyme, salt, and black pepper, and cook for 1 minute more until fragrant.
- Cook Chicken: Add the chicken breasts or thighs to the pot and sear for 2–3 minutes on each side until lightly browned. The chicken will finish cooking in the broth.
- Simmer Broth: Pour in the chicken broth and bring the mixture to a gentle boil. Reduce heat to low, cover with a lid, and simmer for 15–20 minutes or until the chicken is cooked through.
- Shred Chicken: Remove the cooked chicken from the pot and shred it using two forks. Return the shredded chicken to the soup pot.
- Add Cream and Tomatoes: Stir in the heavy cream and chopped sun-dried tomatoes, mixing well to combine the flavors.
- Cook Pasta: Add the small pasta to the pot and simmer for 8–10 minutes, stirring occasionally, until the pasta is tender.
- Incorporate Cheese and Spinach: Stir in the grated Parmesan cheese and fresh spinach. Let cook for another 2 minutes until the spinach wilts and the soup turns creamy.
- Finish and Serve: Optionally, add chopped fresh basil and a squeeze of lemon juice for brightness. Serve the soup hot, ideally with crusty bread on the side.
Notes
- The soup thickens as it sits—add more chicken broth when reheating if the soup becomes too thick.
- Swap in gnocchi or rice instead of pasta for a variation in texture and flavor.
- For extra depth of flavor, stir in a spoonful of pesto or a splash of white wine while cooking.
