For the soup:
- 1 tablespoon olive oil
- 1 pound Italian sausage (mild or spicy, casings removed)
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon tomato paste
- 1/2 cup sun-dried tomatoes, drained and chopped
- 6 cups chicken broth
- 1 cup orzo pasta
- 1/2 cup heavy cream
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
For garnish:
- Fresh basil (optional)
Instructions
- Heat olive oil: In a large pot over medium heat, heat olive oil.
- Cook sausage: Add sausage, cook until browned and crumbled, about 6–7 minutes. Remove excess grease if necessary.
- Add onion and garlic: Add diced onion, cook until softened, about 3–4 minutes. Stir in garlic, Italian seasoning, red pepper flakes, tomato paste, and sun-dried tomatoes. Cook for 2–3 minutes.
- Add broth and orzo: Pour in chicken broth, bring to a boil. Stir in orzo, reduce heat to simmer. Cook for 10 minutes until orzo is tender.
- Stir in cream and spinach: Lower heat, stir in cream and spinach. Simmer for 2–3 minutes until spinach is wilted.
- Finish soup: Stir in Parmesan cheese, season with salt and pepper. Serve hot, garnished with basil if desired.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- This soup thickens as it sits, add a splash of broth or water to leftovers when reheating.
