  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon tomato paste
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 1/2 cup heavy cream
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

For garnish:

  • Fresh basil (optional)

Instructions

  1. Heat olive oil: In a large pot over medium heat, heat olive oil.
  2. Cook sausage: Add sausage, cook until browned and crumbled, about 6–7 minutes. Remove excess grease if necessary.
  3. Add onion and garlic: Add diced onion, cook until softened, about 3–4 minutes. Stir in garlic, Italian seasoning, red pepper flakes, tomato paste, and sun-dried tomatoes. Cook for 2–3 minutes.
  4. Add broth and orzo: Pour in chicken broth, bring to a boil. Stir in orzo, reduce heat to simmer. Cook for 10 minutes until orzo is tender.
  5. Stir in cream and spinach: Lower heat, stir in cream and spinach. Simmer for 2–3 minutes until spinach is wilted.
  6. Finish soup: Stir in Parmesan cheese, season with salt and pepper. Serve hot, garnished with basil if desired.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • This soup thickens as it sits, add a splash of broth or water to leftovers when reheating.
