  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the soup:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5-ounce) can diced tomatoes with juice
  • 6 cups low-sodium beef or chicken broth
  • 1 cup small pasta (like ditalini or orzo)
  • 3 cups fresh spinach or kale, chopped
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Prepare the meatballs: In a large bowl, combine all the meatball ingredients and mix until just combined. Roll into small, bite-sized balls (about 1 inch in diameter) and set aside.
  2. Cook the soup: In a large soup pot, heat olive oil over medium heat. Add the diced onion and sauté until soft. Stir in garlic and cook for 1 minute. Add diced tomatoes, broth, basil, oregano, salt, and pepper. Bring to a simmer. Gently add the meatballs and simmer for 15-20 minutes. Add pasta and cook for 8-10 minutes. Stir in spinach or kale and cook until wilted. Adjust seasoning and serve hot.

  • You can make the meatballs ahead and freeze them for quick soup prep.
