- 1 small red onion, thinly sliced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved

- 2 teaspoons dried oregano
- ½ teaspoon ground cumin
- ½ teaspoon paprika
- Salt and black pepper to taste

Instructions
- Cook the Beef: In a large skillet over medium heat, add the olive oil and cook the ground beef until browned and fully cooked, breaking it apart as it cooks, about 6 to 8 minutes. Drain any excess fat if needed.
- Sauté Aromatics: Add the sliced red onion and minced garlic to the skillet and sauté for 2 to 3 minutes until softened and fragrant, stirring occasionally.
- Cook Vegetables: Stir in the diced zucchini and red bell pepper, cooking for another 5 to 6 minutes until the vegetables are tender.
- Add Tomatoes and Seasonings: Add the halved cherry tomatoes, sliced kalamata olives, dried oregano, ground cumin, paprika, salt, and black pepper. Cook for an additional 2 to 3 minutes, stirring occasionally, until everything is well combined and the tomatoes soften slightly.
- Finish and Serve: Remove from heat and sprinkle the dish with chopped fresh parsley and crumbled feta cheese, if using. Serve warm with lemon wedges on the side for squeezing.
