Description

This Mediterranean Ground Beef Stir-Fry is a vibrant and healthy one-pan meal featuring seasoned ground beef, fresh vegetables, and classic Mediterranean flavors like oregano, cumin, and kalamata olives. It’s a quick and easy stovetop dish that’s perfect for a nutritious weeknight dinner, with optional feta cheese and lemon wedges to brighten each bite.

Ingredients

Scale

Meat and Oil

  • 1 lb ground beef
  • 1 tablespoon olive oil

Vegetables and Aromatics

  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved

Additional Flavorings

  • ¼ cup kalamata olives, sliced
  • 2 teaspoons dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and black pepper to taste

Garnishes

  • 2 tablespoons chopped fresh parsley
  • ¼ cup crumbled feta cheese (optional)
  • Lemon wedges for serving

Instructions

  1. Cook the Beef: In a large skillet over medium heat, add the olive oil and cook the ground beef until browned and fully cooked, breaking it apart as it cooks, about 6 to 8 minutes. Drain any excess fat if needed.
  2. Sauté Aromatics: Add the sliced red onion and minced garlic to the skillet and sauté for 2 to 3 minutes until softened and fragrant, stirring occasionally.
  3. Cook Vegetables: Stir in the diced zucchini and red bell pepper, cooking for another 5 to 6 minutes until the vegetables are tender.
  4. Add Tomatoes and Seasonings: Add the halved cherry tomatoes, sliced kalamata olives, dried oregano, ground cumin, paprika, salt, and black pepper. Cook for an additional 2 to 3 minutes, stirring occasionally, until everything is well combined and the tomatoes soften slightly.
  5. Finish and Serve: Remove from heat and sprinkle the dish with chopped fresh parsley and crumbled feta cheese, if using. Serve warm with lemon wedges on the side for squeezing.

Notes

  • Great served over rice, quinoa, or couscous for a complete meal.
  • For a low-carb option, serve with cauliflower rice or lettuce wraps.
  • Ground beef can be substituted with ground lamb or turkey as preferred.
