- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 4 cups vegetable broth
- 1 cup canned diced tomatoes
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons crumbled feta cheese (optional)
Instructions
- Saute Aromatics: Heat olive oil in a large pot. Cook onion and garlic until softened.
- Add Vegetables: Stir in cauliflower, carrot, and celery. Cook for 5 minutes.
- Season and Simmer: Add cumin, coriander, paprika, turmeric, vegetable broth, tomatoes, salt, and pepper. Simmer for 20–25 minutes.
- Blend and Serve: Use an immersion blender for a smooth consistency. Stir in lemon juice. Garnish with parsley and feta.

- For a creamier texture, add 1/2 cup coconut milk or heavy cream before blending.
