For the stew:
- 1 lb beef stew meat (cut into 1-inch cubes)
- 1 tablespoon olive oil
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- ½ teaspoon ground cinnamon
- ¼ teaspoon cayenne pepper (optional)
- 1 tablespoon tomato paste
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- ¾ cup dried brown or green lentils (rinsed)
- 2 carrots (peeled and chopped)
- 1 small sweet potato (peeled and diced)
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro or parsley
Instructions
- Prepare the beef: Heat olive oil in a large pot and sear the beef until browned. Set aside.
- Sauté aromatics: In the same pot, sauté onion until soft, then add garlic and spices; cook until fragrant.
- Add remaining ingredients: Stir in tomato paste, diced tomatoes, beef broth, lentils, carrots, sweet potato, and browned beef. Season and simmer.
- Serve: Garnish with fresh herbs before serving.

- This stew tastes even better the next day as the flavors deepen.

- For a vegetarian version, omit beef and use chickpeas instead.
