  • 1 lb beef stew meat (cut into 1-inch cubes)
  • 1 tablespoon olive oil
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper (optional)
  • 1 tablespoon tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • ¾ cup dried brown or green lentils (rinsed)
  • 2 carrots (peeled and chopped)
  • 1 small sweet potato (peeled and diced)
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro or parsley

Instructions

  1. Prepare the beef: Heat olive oil in a large pot and sear the beef until browned. Set aside.
  2. Sauté aromatics: In the same pot, sauté onion until soft, then add garlic and spices; cook until fragrant.
  3. Add remaining ingredients: Stir in tomato paste, diced tomatoes, beef broth, lentils, carrots, sweet potato, and browned beef. Season and simmer.
  4. Serve: Garnish with fresh herbs before serving.
