- 500g (1 lb) ground beef
- 250g (1/2 lb) ground pork
- 1 small onion finely chopped
- 2 garlic cloves minced
- 1/2 cup fresh breadcrumbs
- 1/4 cup whole milk
- 1 large egg
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil (for browning)
For the sauce:
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 1/2 cups beef broth
- 1 tablespoon tomato paste
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon black pepper
- Salt to taste
Instructions
- Soak the breadcrumbs: In a small bowl, soak the breadcrumbs in milk until softened.
- Mix the meatball ingredients: Combine beef, pork, soaked breadcrumbs, onion, garlic, egg, Worcestershire sauce, thyme, paprika, salt, and pepper in a bowl.
- Form meatballs: Shape the mixture into 12–16 meatballs.
- Brown the meatballs: Cook meatballs in olive oil until browned, then set aside.
- Make the sauce: In the same skillet, make a roux with butter and flour, then add broth, tomato paste, rosemary, pepper, and salt.
- Simmer: Return meatballs to the skillet, cover, and simmer until cooked through, about 15–20 minutes.
- Serve: Enjoy the meatballs hot with your choice of sides.
