- 1 cup cremini or baby bella mushrooms (sliced)
- 1/2 teaspoon thyme (fresh or dried)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces smoked Gouda cheese (sliced or shredded)
- 1 tablespoon mayonnaise (optional, for extra crispiness)
Instructions
- Sauté Onion and Mushrooms: In a medium skillet, heat olive oil over medium heat. Add the sliced onion and cook for 3–4 minutes until softened. Add the mushrooms, thyme, salt, and pepper. Continue cooking for 6–8 minutes until the mushrooms are browned and the onions are caramelized. Remove from heat and set aside.
- Assemble and Grill: Butter one side of each slice of bread. If using, spread a thin layer of mayonnaise on the unbuttered side of the bottom slices for added crispness. Place buttered side down in a skillet over medium heat. Layer the Gouda cheese evenly on each slice, then top with the mushroom-onion mixture. Cover with the remaining bread slices, buttered side up. Grill the sandwiches for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted. Slice and serve hot.
