Chicken:
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
Mushroom Filling:
- 1 tablespoon butter
- 2 cups mushrooms (finely chopped)
- 2 cloves garlic (minced)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped parsley
Additional:
- 1/4 teaspoon paprika
- toothpicks or kitchen twine
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C).
- Prepare Mushroom Filling: In a skillet, heat olive oil and butter. Add mushrooms, cook until softened. Stir in garlic, salt, pepper, and thyme. Mix in cheeses and parsley.
- Prepare Chicken: Cut a pocket in each chicken breast. Stuff with mushroom mixture. Secure with toothpicks or twine. Season outside with paprika, salt, and pepper.
- Cook Chicken: Sear stuffed chicken in a skillet. Bake in the oven until cooked through.
