Instructions

  1. Preheat the Oven: Preheat oven to 375°F. Line a 12-cup muffin tin with paper liners or grease well.
  2. Prepare the Oats: In a small bowl, combine oats and milk; let sit for 10 minutes to soften.
  3. Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Prepare Wet Ingredients: In another bowl, whisk together brown sugar, oil, eggs, and vanilla until smooth. Stir in soaked oats, grated apple, and grated carrot.
  5. Combine and Bake: Add the wet mixture to the dry ingredients, folding gently until just combined. If using nuts, fold them in. Divide batter evenly among muffin cups, filling each about 3/4 full. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Cool in the pan for 5 minutes before transferring to a wire rack.
