Pudding:

  • 3 cups whole milk
  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 2 teaspoons vanilla extract

Additional:

  • 4 ripe bananas, sliced
  • 1 box (11 oz) vanilla wafers
  • Optional whipped cream or meringue for topping

Instructions

  1. In a medium saucepan, whisk together sugar, flour, and salt. Slowly whisk in the milk until smooth. Place over medium heat and cook, stirring constantly, until the mixture begins to bubble and thicken, about 8–10 minutes.
  2. In a separate bowl, whisk the egg yolks. Slowly pour in about 1/2 cup of the hot pudding mixture while whisking to temper the eggs. Pour the egg mixture back into the saucepan and cook for another 2–3 minutes, stirring constantly, until thick and smooth. Remove from heat and stir in butter and vanilla.
  3. In a 2-quart dish or trifle bowl, layer vanilla wafers, banana slices, and warm pudding. Repeat the layers until all ingredients are used, ending with pudding on top. Let cool at room temperature, then refrigerate for at least 4 hours to set.
  4. Top with whipped cream or meringue before serving, if desired.
