Instructions
- Caramelize the Onions: In a large pot or deep skillet, melt the butter with olive oil over medium heat. Add the sliced onions, salt, pepper, and sugar. Cook slowly, stirring often, for 20–25 minutes until the onions are deeply golden and caramelized.
- Add Garlic and Thyme: Stir in the garlic and thyme, cooking for 1 minute to release their fragrance.
- Incorporate Flour and Wine: Sprinkle in the flour and stir to evenly coat the onions. Add the dry white wine (if using) and cook for 2 minutes, scraping up browned bits from the bottom of the pot for added flavor.
- Simmer with Broth and Pasta: Pour in the beef broth and bring to a simmer. Add the uncooked pasta and cook uncovered for 10–12 minutes, stirring occasionally, until the pasta is al dente and the liquid has mostly absorbed.
- Finish with Cream and Cheese: Stir in the heavy cream, Gruyère, and Parmesan cheese. Mix thoroughly until the cheese is melted and the sauce is creamy. Adjust seasoning with salt and pepper as needed.
- Serve: Serve hot, garnished with chopped parsley if desired.
