For the fritters
- 2 large onions, thinly sliced
- 200g feta cheese, crumbled
- 1 cup all-purpose flour
- 1 tsp baking powder
- 2 eggs
- 2 tbsp fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- Vegetable oil, for frying (about 1 inch depth)
For the dipping sauce
- 1/3 cup sweet chilli sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp fresh lime juice
- 1 clove garlic, minced
- 1 tsp sesame oil
- 1 fresh red chilli, finely chopped (optional)
Instructions
- Prepare the fritter batter: In a large mixing bowl, combine the thinly sliced onions, crumbled feta cheese, all-purpose flour, baking powder, chopped fresh parsley, salt, and black pepper.
- Add eggs and mix: Crack the two eggs into the bowl and mix thoroughly until a thick batter forms. If the batter feels too stiff, add a little water to achieve a scoopable consistency.
- Heat oil for frying: Pour vegetable oil into a deep frying pan or pot to a depth of about 1 inch and heat over medium-high heat until it reaches 350°F (175°C), suitable for deep frying.
- Fry the fritters: Scoop heaped spoonfuls of the batter and carefully drop them into the hot oil. Fry in batches to avoid overcrowding.
- Cook until golden and crisp: Fry the fritters for about 3 to 4 minutes per side, turning occasionally, until they are golden brown and crisp on both sides.
- Drain excess oil: Remove the fritters from oil using a slotted spoon and place them on paper towels to drain any excess oil.
- Make the dipping sauce: In a small bowl, whisk together sweet chilli sauce, soy sauce, rice vinegar, lime juice, minced garlic, sesame oil, and finely chopped red chilli if using.
- Adjust seasoning: Taste the dipping sauce and adjust the flavors by adding more lime juice for tanginess or more sweet chilli sauce for additional sweetness, as preferred.
- Serve: Arrange the fritters on a serving platter and serve warm alongside the sweet chilli soy dipping sauce.
Notes
- You can adjust the heat level of the dipping sauce by adding more or less fresh red chilli.
- The batter consistency is important for fritters to hold shape; add water gradually if too thick.
- Use a thermometer to monitor oil temperature to ensure proper frying and avoid greasiness.
- For a gluten-free version, substitute all-purpose flour with gluten-free flour blends.
- Fritters are best served immediately but can be kept warm in a low oven if needed.
