  • Herb Butter:

  • 1/2 cup unsalted butter, softened
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • Stuffing:

  • 1 large onion, quartered
  • 2 carrots, cut into chunks
  • 2 celery stalks, cut into chunks
  • 1 lemon, halved
  • Broth:

  • 2 cups chicken broth or turkey stock

Instructions

  1. Preheat the Oven: Preheat the oven to 325°F (165°C).
  2. Prepare the Turkey: Remove giblets and pat the turkey dry. Mix butter, oil, garlic, herbs, salt, and pepper. Spread butter mixture under the skin and all over the turkey.
  3. Stuff the Turkey: Fill the cavity with onion, carrots, celery, and lemon.
  4. Roast: Place turkey on a rack in a roasting pan, pour broth in the pan. Roast for 3-3 1/2 hours, basting every 45 minutes, until the thigh reaches 165°F.
  5. Rest and Carve: Remove from oven, tent with foil, and rest for 20-30 minutes before carving.
